Everything but the Bagel Potato Chips + Caramelized Onion Yogurt Dip

WOW. This one is SO good. I used to be a big fan of sour cream and onion dip (you know, just sour cream mixed with that onion powder packet thing) with some Ruffles. But this recipe definitely rivals that! Homemade, still warm, crispy potato chips plus hour-long caramelized onions mixed with Siggi’s triple cream plain yogurt and some spices = the ideal snack (especially for Sunday football games this fall?! Not like I watch football, but I’m imagining that could be a good snack for that situation).

So, first up: potato chips.

I used Yukon gold potatoes and a mandoline slicer (which I think is crucial that you have), and seasoned with salt and Trader Joe’s Everything but the Bagel seasoning (AKA the best seasoning in all the land).  They were roasted on a sheet pan in a single layer, not touching, at 450 F for about 30 minutes. If you have a normal oven that functions properly (forever convinced mine is not one of those ovens), you may only need 15-20 minutes. Also crucial that you stay near the oven and watch those puppies because they will burn super quick. I didn’t flip them at any point – they seemed to get crisped on both sides without flipping.

Now, the dip.

Caramelized onions take a super long time, but are well worth the wait! You don’t have to be constantly watching them, either. I used an entire yellow onion, sliced, and just plopped them in a pan with some olive oil and salt on low/medium, and moved them around every 10 or so minutes until they were nice and soft and caramelly (not a word, but it should be) and delicious. In total, it was about 50 minutes.

THEN, I mixed with Siggi’s triple cream yogurt (could be an entire blog post on its own, with how delicious that yogurt is), salt, Trader Joe’s onion salt, and garlic powder. Siggi’s is my favorite yogurt brand because of their dedication to keeping their yogurts low sugar, with simple and natural ingredients. I have always been a plain yogurt lover (I love the tang), but they also have many fruit flavored yogurts that are just flavored with the fruit alone! Technically, Siggi’s yogurt is called “skyr”, which is an Icelandic thick yogurt (similar to Greek yogurt in consistency).

Everything but the Bagel Potato Chips + Caramelized Onion Dip

Deliciously crispy and warm baked homemade potato chips seasoned with Everything but the Bagel seasoning, dipped in caramelized onion dip made with yogurt.

Ingredients
  

  • 4-6 Yukon gold potatoes small
  • 2 Tbsp avocado oil
  • 2 Tbsp Everything but the Bagel Seasoning Trader Joe’s
  • 12 oz Siggi’s plain triple cream yogurt (or Greek yogurt)
  • 1 tsp salt
  • 1 tsp onion salt
  • 1 tsp garlic powder
  • 1 yellow onion medium
  • 1 Tbsp olive oil
  • 2 Tbsp green onions for garnish

Instructions
 

  • Place sliced yellow onion in a warmed pan on low/medium heat with olive oil and add a pinch of salt.
  • Stir onions every 10 minutes, until soft and browned and caramelized, about 45-55 minutes.
  • Meanwhile, preheat the oven to 450 degrees F.
  • Slice potatoes with a mandoline slicer on the smallest setting.
  • Mix potatoes in a large bowl with avocado oil, salt, and Everything but the Bagel seasoning. 
  • Arrange potatoes in a single layer on a baking sheet (you may need multiple; I used three.)
  • Bake potato chips for anywhere from 15-30 minutes, checking often to ensure they are not burning. 
  • Once removed from oven, add additional salt while they are still warm. 
  • When onions are done, mix in the onions with the yogurt, salt, onion salt, and garlic powder in a medium bowl. 
  • Transfer onion dip to a serving bowl and garnish with green onions. 
  • Dip away!
