Jump to RecipeYou may be a little skeptical about how walnuts can be turned into something resembling ground beef, but these vegan nachos show just how easily a non-meat-taco-meat is an incredible substitute for the real stuff!
This recipe is so simple, which is great for this COVID-19 time, when access to all of the same groceries we’re used to may be a little limited. I even noted some additional substitutions you can make if you’re reallllly stretching the pantry as far as you can right now (AKA, me!).
First, things first: The most important component for these vegan nachos is the walnut “meat”. Yes, you can make nachos with just cheese, but the walnuts make it so much more filling.
California walnuts are nutrition superstars:
- They are full of omega-3 fatty acids, specifically 2.5 grams of alpha-linolenic acid (ALA) per ounce of walnuts. Omega-3’s are crucial for reducing inflammation and promoting heart and brain health.
- Per ounce, California walnuts also contain 4 grams of protein and 2 grams of fiber, making them a satiating source of plant-based protein.
- They are so versatile! From being the star of savory taco meat to sweet treats like cookies or granola, walnuts can adapt to whatever style of recipe you’re cooking up!
Vegan Nachos: How-To
These are beyond easy, guys. There are just a few simple things you need, and a few things that would nice-to-have, but not absolutely necessary.
MUST-HAVES:
- California walnuts
- Spices: Garlic, cumin, paprika, and salt.
- Chips: Any kind will do, but a sturdy tortilla chip works best. I used Siete’s Grain-Free Sal Y Limon chips for these ones for some extra lime flavor.
- Cheese: This recipe uses Daiya vegan cheese sauce, but good ol’ regular cheese will work if you’re a dairy-eater.
- Something tomato-y: One tablespoon of tomato paste or ketchup is needed for the vegan taco meat.
NICE-TO-HAVES:
- Toppings: Diced tomato, avocado, red onion, cilantro, green chiles, or lime.
- Hot sauce or salsa.
Vegan Nachos With Walnut Taco Meat
Ingredients
- 1.5 cups California walnuts
- 2 Tbsp olive oil
- 1 Tbsp tomato paste or ketchup
- 1 Tbsp minced garlic, garlic paste, or garlic powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp salt
- 1/8 tsp cayenne pepper more if you like it spicy
- 12 oz tortilla chips (These are Siete Sal y Limon)
- 4-6 oz dairy-free cheese sauce (This is one packet of Daiya Cheddar Style Cheeze Sauce)
- 1/4 cup tomato diced, optional
- 1/2 of an avocado diced, optional
- 1/8 cup red onion diced, optional
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Add walnuts, olive oil, tomato paste/ketchup, garlic, paprika, cumin, and salt to a food processor.
- Gently PULSE for 10-15 seconds; do not over-pulse or else it will become a puree. It should resemble ground taco meat.
- Arrange chips on a baking tray and add cheese sauce, vegan walnut meat, and any toppings you'd like.
- Bake for 10 minutes, until warmed. Serve and eat immediately!
