Vegan Nachos With Walnut Taco Meat
Dairy-free cheese with vegan taco meat made out of walnuts make for the perfect plant-based appetizer or snack.

- 1.5 cups California walnuts
- 2 Tbsp olive oil
- 1 Tbsp tomato paste or ketchup
- 1 Tbsp minced garlic, garlic paste, or garlic powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp salt
- 1/8 tsp cayenne pepper more if you like it spicy
- 12 oz tortilla chips (These are Siete Sal y Limon)
- 4-6 oz dairy-free cheese sauce (This is one packet of Daiya Cheddar Style Cheeze Sauce)
- 1/4 cup tomato diced, optional
- 1/2 of an avocado diced, optional
- 1/8 cup red onion diced, optional
Preheat the oven to 350 degrees Fahrenheit.
Add walnuts, olive oil, tomato paste/ketchup, garlic, paprika, cumin, and salt to a food processor.
Gently PULSE for 10-15 seconds; do not over-pulse or else it will become a puree. It should resemble ground taco meat.
Arrange chips on a baking tray and add cheese sauce, vegan walnut meat, and any toppings you'd like.
Bake for 10 minutes, until warmed. Serve and eat immediately!
