Vegan Nachos With Walnut Taco Meat

Dairy-free cheese with vegan taco meat made out of walnuts make for the perfect plant-based appetizer or snack.

Ingredients
  

  • 1.5 cups California walnuts
  • 2 Tbsp olive oil
  • 1 Tbsp tomato paste or ketchup
  • 1 Tbsp minced garlic, garlic paste, or garlic powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper more if you like it spicy
  • 12 oz tortilla chips (These are Siete Sal y Limon)
  • 4-6 oz dairy-free cheese sauce (This is one packet of Daiya Cheddar Style Cheeze Sauce)
  • 1/4 cup tomato diced, optional
  • 1/2 of an avocado diced, optional
  • 1/8 cup red onion diced, optional

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Add walnuts, olive oil, tomato paste/ketchup, garlic, paprika, cumin, and salt to a food processor.
  • Gently PULSE for 10-15 seconds; do not over-pulse or else it will become a puree. It should resemble ground taco meat.
  • Arrange chips on a baking tray and add cheese sauce, vegan walnut meat, and any toppings you'd like.
  • Bake for 10 minutes, until warmed. Serve and eat immediately!
